NO BAKE Keto Peanut Butter Bars


If you love peanut butter and chocolate, you have to make these easy keto peanut butter bars. You just need a few simple ingredients and freezer and you’ll be snacking on this tasty treat in no time!

The best part is that you don’t have to use peanut butter. Since peanut butter can be higher in carbs, you can substitute with your favorite nut butter. Try almond butter, cashew butter or even macadamia nut butter instead!

Makes: 12 bars

1 ½ cup peanut butter or nut butter
1 cup almond flour
1/2 cup coconut flour
1/4 cup powdered erythritol
1 teaspoon vanilla
Pinch of salt
4 tablespoons melted coconut oil, divided
7 oz sugar free chocolate chips, I use ChocZero brand

1️⃣ 00:11 – In a large bowl, add peanut butter or nut butter, almond flour, coconut flour, powdered sweetener, vanilla and salt. Mix until combined. Add 2 tablespoons of melted coconut oil if the mixture seems dry.
2️⃣01:43 – Press peanut butter mixture into a parchment lined square baking dish. Freeze for 30 minutes to harden.
3️⃣ 02:23 – In a medium bowl, combine sugar free chocolate chips with 2 tablespoon coconut oil. Melt in the microwave at 30 second intervals, stirring in between, until melted. Option to melt using the double boiler method.
4️⃣ 02:44 – Pour melted chocolate over the top of peanut butter layer. Sprinkle with flaky sea salt if desired. Freeze for 2 hours to set the chocolate. Cut into 12 bars.

**To lower the carbs, use a nut butter like almond butter or macadamia nut butter**
