KETO BREAKFAST QUESADILLAS
1/2 cup shredded cheese
1 low carb tortilla (see options above)
Fillings: bacon, sausage, tomato, pesto, tomato
1️⃣ – In a small bowl, beat eggs until combined.
2️⃣ – In a non-stick skillet large enough to fit the tortilla, heat to medium and spray with cooking spray. Pour in eggs and swirl the pan to coat the bottom of the pan. Lower the heat to low-medium.
3️⃣ – Sprinkle about 2 tablespoons of shredded cheese on top of the egg mixture. This will help the tortilla stick to the eggs.
4️⃣ – Lay down tortilla on top of egg and cheese. Let sit for 30 seconds then flip so that the tortilla is on the bottom and egg is on top.
5️⃣ – Sprinkle remaining cheese on top of the egg. Add toppings like bacon, sausage or vegetables if using to one side.
