I partnered with Traeger Grills again (who sponsored this video) to show you how to smoke & roast a turkey from your pellet grill. It’s so much easily than the oven (mostly because I don’t have to bend down & pull out the turkey every 15 minutes to baste it). Plus it frees up oven space to work on side dishes. ANDDDD Traeger Turkey has soooo much flavor!

Then, I show you how you can use the leftover turkey to create some fun sandwiches on my Traeger Ironwood 885. I make 3 different turkey sandwiches using leftover keto Thanksgiving ingredients – including a breakfast hot turkey sandwich (my favorite).

6-8 pound whole bone-in, skin-on turkey breast
4 tablespoons butter, softened
1 teaspoon Traeger Pork & Poultry Seasoning or salt
1/4 teaspoon pepper (optional)
1/4 cup sugar free maple syrup
1 tablespoon dijon mustard

1. Pat turkey dry. Combine butter with seasoning. Slide butter mixture underneath the skin on top of the breast being careful not to tear the skin. Rub excess butter over the outside of the skin. Sprinkle seasoning on top of skin and in side cavity.
2. Turn on Traeger and set temperature to 225 degrees with the lid closed for 15 minutes. Place turkey in a roasting pan (breast up) and on the grill grate. Cook at 225 degrees until the internal temperature of the thicken part of the turkey breast is 100-110 degrees. (about 1 hour)
3. In a small bowl, mix maple syrup and dijon mustard. Using a brush, cover the outside of the turkey with maple dijon. Increase temperature on the Traeger to 350 degrees and continue roasting until internal temperature of the bird is 160 degrees. Baste with fallen turkey juices form the roasting pan and and leftover maple dijon every 15 minutes.
4. Let rest 20 minutes before carving.
