WELCOME TO MY KETO HASH BROWN EXPERIEMENT!!
I was making eggs & bacon the other morning and really wanted hash browns. Real bad. All the most popular recipes for keto hash browns on Google involved making hashbrowns out of cabbage or cauliflower. Not only does that not sound very appetizing, but all the recipes looked like a pain to make!
I decided to test to see if that popular keto french fry recipe could be used to make keto hash browns. I also decided to test it using three keto flours – almond, coconut and lupin – since those were the most popular variations from the keto french fries experiment. I made the dough for each and grated it to make “potato” shreds using a cheese grater. Then fried them each in avocado oil.
I’m pleased to report I have a winner! And I’m amazed at how much they look, tastes and feel like real hash browns!

1/2 cup coconut flour
1 tablespoon xanthan gum
1/2 teaspoon salt
9 tablespoons hot water
40 drops mashed potato extract
Mix together coconut flour, xanthan gum and salt. Pour in water and flavoring. Stir to combine. Shred into small shreds using a cheese grater. Heat avocado oil over medium heat. Grab a handful of shreds and gently press together. Place in hot oil. Fry on each side until golden brown.
