FLUFFY KETO COCONUT FLOUR PANCAKES I Blender Pancakes I Super Easy and Simple Recipe


This is probably my most popular recipe on my Instagram @low.carb.love! I wanted to share a step by step so you can make these at home, and get them fluffy every time 🙂

Serving Size: 2 – Makes 4 good size pancakes

Ingredients:
2 oz softened cream cheese
2 eggs, room temp
1 tbsp sweetener
1 tsp baking powder
2 tbsp coconut flour
1/8 tsp cinnamon
1 tsp vanilla flavoring or extract

Directions:
1. Place everything in a blender and blend until incorporated
2. Let your batter sit for 10 mins!! This is crucial for fluffy pancakes
3. Heat up your griddle or pan, pour batter into pan and cook pancakes
4. Once you see bubbles form, flip. Cook other side for 1-2 more mins
5. Take off heat and enjoy with your favorite syrup! My favorite is Choczero Maple (Discount: LOWCARBLOVE)

Nutrition (per serving): 201 calories, 16 g fat, 9g protein, 2g net carbs

Nutrition per pancake (for 4 pancakes): 100 calories, 8 g fat, 4.5 g protein, 1g net carbs
